Korean broccoli fried rice

Last time I made a batch of brown rice, I froze the extra to use for quick meals. When making out my grocery list for the week, I ran across Korean Broccoli Fried Rice in World Vegan Feast.

The recipe calls for leftover tofu scramble. I was just going to skillet fry tofu, but the tofu I had went bad. So I used some May Wah chicken nuggets I had hanging out in the freezer instead, baked them, then chopped them up. We don’t eat a ton of fake meat products at home, but they are kind of nice every once in a while.

It doesn’t sound like there’s much by way of seasoning in the recipe, but it turns out great. Of course, sesame oil in anything usually pops it into the delicious category for me. Mine is also sprinkled with the gomashio that I keep on hand to sprinkle on whatever I can and a pretty squirt of sriracha. And at about 2 o’clock you’ll see a little pile of “seasoned parched seaweed” I found at Your Dekalb Farmers Market. It’s a little oily so I use it sparingly but it adds a great flavor punch. Oh, and it’s pretty good for you, or something.

Random consumption

The internet connection is slow here at the rental in Seattle. So I’m just going to clear out the last few bits off food I uploaded before we left Atlanta to one post so I can make way for the piles of noms had on the trip.

Thursday and Friday last week I had work meetings at the Grand Hyatt in Buckhead. Nothing on the lunch buffet was vegan, but the kitchen whipped this up for me: tofu on a bed of garlicky potatoes and vegetables. It was pretty good!

Thursday night, Kevin stopped by Healthful Essence on the way back into town from Alabama. My plate full of delicious, from two angles. Seriously, you should try this place.

 

 

Wing Night

We had a bag of May Wah chicken legs taking up space in the freezer because I don’t use a lot of this sort of pre-made fake meat stuff. So this week in an effort to use up some freezer stuff, we had wings. And you can see that Kevin had to pay for this by having not one but two vegetables as sides: kale chips and roasted cauliflower. I just googled for a recipe for the cauliflower and this one was the first result. You only need half the oil, if that, and I just left out the parmesan and chives. Kevin didn’t complain about it so I guess he liked it. That or he was too excited about wings to complain. Oh, and this was the sauce for the wings. I stuck to the recipe amounts because I wasn’t sure how spicy it would be. It wasn’t very spicy. Maybe next time we’ll cut in some spicier hot sauce.

 

 

Adventures in Fake Tuna

A while back I picked up a package of May Wah fake tuna and tossed it in my freezer. I had to wait until Kevin went out of town to use it because I knew he’d hate it.

So last week, I busted it out and made a Tuna Salad for sammiches. I put in the standard tuna salad things: onion, celery, veganaise and I also tossed in some shredded carrot to sneak in a little more veg. It seriously looks just like tuna. But isn’t as fishy and doesn’t totally have a flaky texture like tuna. It’s still wheat gluten like.

So here’s my bachelorette dinner: tuna salad sammich and the end of a bag of frozen spinach mixed with cauliflower and peas.

Teese Pizzas

We finally busted into that Teese log this weekend. First, we tried a bit cold straight off the log. Not bad! The taste is very similar to a mild mozzarella, well, as far as I can remember. 🙂 The texture was a little softer than Vegan Gourmet, but it had been sitting at room temperature for a while. Here’s a weird thing…when handling it to grate, it’s REALLY oiling feeling on your hands. But, it doesn’t really taste that way, cold or hot. They are not lying. It totally melts! We cooked these pizzas at 425 degrees F and at about 18 minutes we started getting some melting going on, but the bottoms were going to get too brown so we finished under the broiler. And as you can see, it melted up just fine!
